It will save you from hacking it to pieces in frustration, and ensure you serve up nice looking slices for the majority of diners. The best knife to use is one with a long very thin blade. Ham slicing knives have a rounded end. These knives are generally inexpensive and last a lifetime as they only get used once a year, but a good thin bladed meat carving knife will do the job just as well.
Crunchy roast potatoes can be hard to achieve on Christmas day as the oven is being used for other dishes. I love this quick method here. It only takes 30 minutes in the oven to turn the crushed potatoes nice and golden. Finally, one last important point, the whole country will be having their ovens blasting on high from about 10.00am until 5.00pm. Do not expect your oven to operate on full grunt. It'll take a little longer than normal to cook everything as power is reduced a little. Open the oven door only when you need to, and close it immediately you have finished to conserve heat. Calm down, chill out, all of that (or pour another glass of bubbly) 'cos you will get there in the end!).
