Make that a triple serving ... 1st October is World Vegetarian Day, not something that is ever going to slip under my radar because, in case you hadn't noticed, we're rather fond of vegetables at Shared Kitchen. In fact, we're crazy about them. Beats me though, why potatoes continue to get a bad rap, especially when 2008 was declared the International Year of the Potato by the United Nations (oh, how I rejoiced!), drawing attention to the role the potato plays in eradicating world poverty. Bring it on, I reckon (more potatoes, I mean, and addressing poverty). So enough of this talk that tatties once a week is enough. Never! Get on to this recipe of gorgeous golden potatoes NOW before summer sees expensive boxes of designer potatoes flooding the markets. Nothing better for a World Vegetarian Day menu ... just add in a good mixed salad with masses of fresh herbs, avocado and a few nuts and you're good to go.
